Noble Cut Distillery was founded in 2015 in Gahanna, Ohio, a suburb of Columbus, Ohio. The distillery was started with the idea to bring true handcrafted spirits to the Ohio liquor market.
Noble Cut derives its name from a process in the distilling of grains where a distiller makes “cuts” to separate unwanted alcohol from the final batch. The hearts cut, also called the ‘Noble Cut’ is the most desired cut by distillers. The noble cut is the only spirit from distillation that is used in any Noble Cut product.
MEET THE FOUNDER
Tony Guilfoy
Raised outside of St. Louis, Missouri, Tony was introduced to moonshining, wine making, and crafting a six-generation Limoncello recipe. Tony started in the restaurant industry at the age of 14 and has continued with experiences ranging from being a dishwasher at a local bistro to corporate auditing at international fortune 500 restaurant groups. From an amateur distiller for decades to distilling professionally full-time since 2015, Tony is recognized internationally for his distilling and spirit finishing techniques, as well as, product development and advanced industry knowledge. Throughout his career, he developed a vast amount of experience in restaurant and bar operations, flavor and recipe development, and executive level strategic planning and project implementation.
Tony graduated from the University of Central Missouri with B.S. in Public Relations and Speech Communications and completed his MBA from Webster University with an emphasis in Economics and Finance.

Shawn O'Reilly
Shawn is a successful entrepreneur and executive. His experience over the past 25 years ranges from consulting and C-suite roles in corporate environments to the management of startup, launch and operation of new ventures, along with investing in ventures at various stages. As a co-founder, Shawn most recently drove multi-million-dollar earnings for an executive coaching and consulting startup – leading to a profitable and successful exit to its new owner, FranklinCovey. He also co-founded / worked with several other businesses as they launched operations and grew to become profitable. Previously, Shawn served in senior roles at Accenture and JPMorgan Chase. In his last role at JPMorgan Chase, he served as the Chief Technology Officer of the Commercial Bank and for Global Banking Operations.
Shawn graduated summa cum laude from John Carroll University with a B.S. in Economics.
